- 2 tbsp olive oil
- 2 tbsp butter
- add 2 and ¼ cups sliced onions
- ½ cup coconut milk
- ½ cup ginger
- 26 garlic cloves, peeled
- ½ tsp cayenne
- 1 and ½ tsp thyme
- 3 and ½ veggie broth
- 4 lemon wedges
Preheat oven to 350 G and get a small dish. Add the 26 cloves and oil. Put a bit salt and coat it.
Put foil over this and bake the garlic for 45 min to make it tender and brown. Remove from oven and let it cool. Smash the garlic with the fingers and release the cloves.
In a pan melt the butter with medium heat and add onions, ginger, cayenne and thyme. Cook 6 min and make the onion seethrough. Add the garlic and the other 26 cloves and cook 3 min more.
Then add the broth and cover the pan to simmer for 20 min. the garlic will be tender and then blend this all. Add the coconut milk, make it simmer and also add salt and pepper. That is all.
